Grain-Free Granola Recipe

Although I don't live or eat in a consistently paleo fashion, I do like some paleo foods. One of my favorites is grain-free granola. It also happens to be simple to make.

Here are the ingredients:

And here are the preparation steps:

  1. Preheat the oven to 275˚F.
  2. In a large food processor, pulse the almonds 6-8 times.
  3. Add the cashews, coconut threads, pumpkin seeds, and sunflower seeds, then pulse again 4 times.
  4. In a large mixing bowl, combine the coconut oil, honey, and vanilla paste. Microwave it until the oil turns to liquid (about a minute).
  5. Add the nut/seed mixture to the bowl and mix thoroughly.
  6. Spread the granola mixture evenly on a non-stick baking sheet (placing parchment paper underneath if your baking sheet is not truly non-stick) and cook for 25 minutes.
  7. Remove baking sheet from oven, mix and re-spread mixture, and cook for another 5 minutes at 300˚F.
  8. Remove baking sheet from the oven and sprinkle with the sea salt, then mix it again.
  9. Add the dried fruit and mix it all together.
  10. Let it cool for 20 minutes and store in an airtight container.

(But I do wonder: can we call it granola if it doesn't have any grain in it? ;-)
