Grain-Free Granola Recipe

Although I don't live or eat in a consistently paleo fashion, I do like some paleo foods. One of my favorites is grain-free granola. It also happens to be simple to make.
Here are the ingredients:
- 2 cups raw almonds
- 2 cups raw cashews
- 1 cup dried, unsweetened coconut threads
- ½ cup raw pumpkin seeds
- ½ cup raw sunflower seeds
- ½ cup coconut oil
- ¼ cup honey
- 1 tsp vanilla paste
- 2-3 pinches of sea salt
- 1-2 cups of dried fruit (I like cranberries)
And here are the preparation steps:
- Preheat the oven to 275˚F.
- In a large food processor, pulse the almonds 6-8 times.
- Add the cashews, coconut threads, pumpkin seeds, and sunflower seeds, then pulse again 4 times.
- In a large mixing bowl, combine the coconut oil, honey, and vanilla paste. Microwave it until the oil turns to liquid (about a minute).
- Add the nut/seed mixture to the bowl and mix thoroughly.
- Spread the granola mixture evenly on a non-stick baking sheet (placing parchment paper underneath if your baking sheet is not truly non-stick) and cook for 25 minutes.
- Remove baking sheet from oven, mix and re-spread mixture, and cook for another 5 minutes at 300˚F.
- Remove baking sheet from the oven and sprinkle with the sea salt, then mix it again.
- Add the dried fruit and mix it all together.
- Let it cool for 20 minutes and store in an airtight container.
Enjoy!
(But I do wonder: can we call it granola if it doesn't have any grain in it? ;-)
